Can you freeze pasta? I do. Kill me now.

Hi Gabbers!

Yes, you can freeze pasta. I’ve been doing it for years. If you have been following my gabbing in any platform, I've shown it a couple times.. 

My mother was the Freezer Queen; she would freeze you if she could! Cheese, yogurt, milk, the coffee ice cubes (I think she kind of invented it), you name it.  

But when I mention pasta, I usually lose people; but let me tell you something before you unsubscribe and cancel me: It works! It does; you just need to follow three basic rules:

  1. Do not overcook it.

  2. Cool it down before you chill or freeze.

  3. Toss some olive oil on it; to be honest, in my darkest minutes, when olive oil was a luxury, I skipped this step, and no one died; but it helps!

HOW TO DEFROST COOKED PASTA

Thaw in the fridge or in a rush, just pour hot water 160°F ( not boiling) on it, let it sit for a few minutes, and drain. Pasta is ready to go! Add sauce, or use in a salad, like this Summer Orzo Salad I just made

This is how I made my  Easy Summer Orzo Salad as part of my EMPTY FRIDGE CHALLENGE

  • 1 cup Orzo pasta, uncooked. Cook according to the instructions on the box, and cool completely.

  • About 1 cup tomatoes, cut into wedges or halved if using cherry or grape tomatoes.

  • About 1 cup roasted onions and different color peppers.

  • 1 can Fishwife Smoked Rainbow Trout

  • Champagne Vinegar, or any vinegar you have and like.

  • Good Extra Virgin Olive Oil

  • Juice of ½ a lemon

  • Salt and pepper to taste

How to Cook Pasta:

  • Use the right size pot for the amount of pasta. If the box says: 6 quarts, it needs 6 quarts of water.

  • Bring the water to a boil. You can cover the pot to accelerate the process.

  • Stick around, it will boil sooner than you think. Remove the lid

  • Add the Pasta, stir once or twice so it all gets “wet” and underwater. This is harder with long pasta, like spaghetti, but it takes a couple of times of doing it to master it.

  • That is why you need a large amount of water.

  • Cook according to the package instructions until al dente. Set a timer; it helps.

  • Check for doneness before the timer goes off, grab a piece of pasta and bite into it.

  • PASTA WATER: SAVE ONE CUP OF COOKING WATER BEFORE YOU DRAIN IT, IF YOU ARE MAKING ANY TYPE OF SAUCE FOR THE PASTA. This become very popular a few years ago. I could write for hours about this, and how my Aunt Susy made the best Fideos con MANTECA IN THE WORLD, just adding the pasta water. JUST SAVE THE DAMN WATER., I’LL EXPLAIN LATER.

  • Drain. 

  • Use the pasta you need at the moment.

  • Cool completely before refrigerating or freezing. I prefer to do portions.
