Flexible Frittata

A Frittata is an Italian oven baked egg dish; similar to an omelette, made with savory ingredients like vegetables, meats and/or cheese mixed with beaten eggs, rather than folded inside, it can be flipped or the top can be finished under a broiler.

It is a quick cooking method, something you can make ahead and eat at any time of the day. Frittatas are served hot or at room temperature, cut in wedges. Preferably with a side salad.

To bake in the oven use a well seasoned cast-iron skillet or nonstick ovenproof skillet. To cook on the stove top use a well oiled stainless steel or a non-stick skillet with a lid.

Ingredients:

  • About 3 cups any combination filling (veggies, cheese, meats)

  • 6 large eggs, beaten

  • Kosher Salt

  • Ground black pepper

  • Dry spices like oregano, thyme, paprika are optional, but most leftovers vegetable swill already have some flavor.

  • Olive oil, butter or Tallow for grading the pan


Combination filling (options):

Raw or cooked spinach, broccoli, kale, or swiss chard, peppers, onions, green onions.

Any leftover sauteed zucchini, yellow squash, cooked asparagus tips, sauteed mushrooms,

A variety of Cheeses: feta, shredded mozzarella, cheddar, parmesan, etc ( remember cheeses add saltiness to the dish)

Cooked Meats, sausages, bacon, meat substitutes.


Equipment:

To bake in the oven:

10-inch cast iron, a baking dish, or a deep sheet pan

To cook on the stovetop:

10-inch stainless steel or non-stick skillet with a well-fitted lid, or a sheet pan that can cover it 


Beat the 6 eggs until combined in a large bow, stir in the fillings, if the fillings are not seasoned add salt and pepper.

Pour the mixture of eggs and filling on the skillet. Serve hot or at room temperature. Or even cold
